Braised Pork
In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, cooking until softened. Add the pork shoulder, cumin, oregano, bay leaves, salt, and pepper. Pour in enough water to cover the pork, bring to a boil, then reduce to a simmer. Cover and cook for about 2-3 hours until the pork is tender and easily shreds.

Black Bean Puree
In a blender, combine the canned black beans and lime juice. Blend until smooth and season with salt and pepper to taste.

Roasted Tomato Aioli
In a bowl, mix together mayonnaise and diced tomatoes. Season with salt and pepper, and stir until well combined.

Assemble Taquitos
Preheat oven to 400°F (200°C). Take a corn tortilla, add a generous amount of shredded pork, a spoonful of black bean puree, and a bit of red cabbage slaw. Roll tightly and place seam-side down on a baking sheet. Repeat with remaining tortillas.

Bake Taquitos
Bake the taquitos in the preheated oven for about 15-20 minutes, or until they are crispy and golden.
