Directions to Prepare Horchata

    Soak the Rice

    Rinse the long-grain white rice under cold water until the water runs clear. In a bowl, combine the rinsed rice, cinnamon stick, and 2 cups of water. Let it soak for at least 4 hours or overnight.

    Blend the Mixture

    After soaking, transfer the rice mixture to a blender. Add the remaining 2 cups of water. Blend on high until the rice and cinnamon stick are finely ground.

    Strain the Mixture

    Strain the blended mixture through a fine mesh sieve or cheesecloth into a large pitcher, discarding the solids.

    Mix in Remaining Ingredients

    Add the vanilla extract, sweetened condensed milk, and milk to the strained liquid. Stir well to combine. Adjust sweetness with sugar if desired.

    Chill and Serve

    Refrigerate the horchata for at least 1 hour before serving. Serve over ice and sprinkle with ground cinnamon on top.
