    Prepare the Masa Cake

    In a mixing bowl, combine masa harina, water, and salt. Mix until a dough forms. Divide the dough into equal portions and shape them into oval cakes (huaraches).

    Cook the Huaraches

    Heat a griddle or skillet over medium heat. Cook each masa cake for about 3-4 minutes on each side until golden brown. Remove and set aside.

    Sauté the Mushrooms

    In the same skillet, add olive oil and heat over medium-high heat. Add the sliced mushrooms, mezcal, salt, and pepper. Sauté until mushrooms are tender and caramelized, about 5-7 minutes.

    Assemble the Huarache

    Spread a layer of black bean puree on each masa cake. Top with sautéed mushrooms, shaved brussels sprouts, a drizzle of chimichurri and garlic sauce, and sprinkle candied pepitas on top.

    Garnish and Serve

    Finish with a handful of microgreens on top. Serve warm and enjoy your delicious Mushroom Huarache!
