Cooking Instructions

  1. 1

    Prepare the Vegetables

Preheat your grill or oven to high heat. Trim the Brussels sprouts and cut the cauliflower into florets. Toss them in a bowl with olive oil, salt, and black pepper.

  2. 2

    Char the Vegetables

Place the Brussels sprouts and cauliflower on the grill or in a roasting pan. Grill or roast for about 15-20 minutes, turning occasionally, until they are charred and tender.

  3. 3

    Make the Dressing

In a small bowl, whisk together lemon juice, minced garlic, Dijon mustard, and a pinch of salt and pepper.

  4. 4

    Toast the Pepitas

In a dry skillet over medium heat, toast the pepitas until they are golden and fragrant, about 5 minutes. Stir frequently to prevent burning.

  5. 5

    Assemble the Dish

In a large serving bowl, combine the charred Brussels sprouts and cauliflower. Drizzle with the dressing and toss to coat. Top with toasted pepitas and crumbled Cotija cheese.
