Preheat your grill or oven to high heat. Toss the Brussels sprouts and cauliflower florets with 2 tablespoons of olive oil, salt, and black pepper. Make sure they are well-coated.

Grill or roast the Brussels sprouts and cauliflower for about 15-20 minutes until they are charred and tender, turning occasionally for even cooking.

In a small bowl, whisk together the remaining olive oil, lemon juice, Dijon mustard, minced garlic, and vegetable broth until emulsified. Season with salt and pepper to taste.

In a dry skillet over medium heat, toast the pepitas until they are golden and fragrant, about 3-5 minutes, stirring frequently.
