Roast the Brussels Sprouts
Preheat the oven to 200°C (400°F). Trim the ends of the Brussels sprouts and cut them in half. In a bowl, toss the Brussels sprouts with olive oil, salt, and pepper until evenly coated. Spread them on a baking sheet in a single layer and roast for about 20-25 minutes or until they are golden brown and tender, stirring halfway through.

Prepare the Garnishes
While the Brussels sprouts are roasting, chop the roasted peanuts and fresh cilantro. In a small bowl, combine the candied sesame seeds with the chopped peanuts.

Assemble the Dish
Once the Brussels sprouts are roasted, remove them from the oven and drizzle with salsa macha. Top with the peanut and sesame seed mixture, and then sprinkle chopped cilantro over the top.

Serve
Serve the Brussels sprouts warm as a side dish or a main plant-based dish.
