    Prepare the Beef

    In a large bowl, combine the lime juice, minced garlic, cumin, oregano, bay leaves, salt, and black pepper. Add the beef chuck roast and marinate for at least 2 hours or overnight for best results.

    Sear the Beef

    In a large pot or Dutch oven, heat some oil over medium-high heat. Remove the beef from the marinade and sear it on all sides until browned. Remove the beef and set aside.

    Braise the Beef

    Add the beef broth to the pot, scraping up any browned bits. Return the beef to the pot, cover, and reduce the heat to low. Let it braise for about 4-5 hours, until the meat is tender and easily shreds.

    Prepare the Pickled Onions

    While the beef is cooking, thinly slice the red onion and place it in a jar. In a small saucepan, combine vinegar and water and bring to a simmer. Pour over the onions and let them marinate until ready to serve.

    Prepare the Salsa

    If using, prepare the molcajete salsa or any other salsa of your preference.

    Serve

    Once the beef is tender, shred it with two forks. Serve with molcajete salsa, chopped scallions, cilantro, sliced radishes, and roasted or boiled beet slices.
