    Marinate the Pork

    In a large bowl, combine the pineapple juice, achiote paste, cumin, oregano, minced garlic, salt, and black pepper. Add the pork shoulder and coat well. Cover and refrigerate for at least 4 hours, preferably overnight.

    Cook the Pork

    Preheat a grill or large skillet over medium-high heat. Remove the pork from the marinade, allowing excess to drip off. Add the vegetable oil to the skillet. Sear the pork on all sides until browned (about 8-10 minutes). Lower the heat and cover, cooking for an additional 30-40 minutes until the pork is tender.

    Shred the Pork

    Once cooked, remove the pork from the skillet and let it rest for 10 minutes. Using two forks, shred the pork into thin strips.

    Prepare the Tacos

    Warm the corn tortillas in a dry skillet. Place shredded pork on each tortilla, top with beet marinated onions, fresh pineapple chunks, and chopped cilantro.
