In a large bowl, whisk together the milk, eggs, sugar, cinnamon, and vanilla extract until well combined.

Soak the Bread
Dip each slice of French bread or brioche into the milk mixture, allowing it to soak for about 10 seconds per side, ensuring they are well-coated but not falling apart.

Cook the Rabanada
In a large skillet, melt the butter over medium heat. Place the soaked bread slices in the skillet and cook for about 3-4 minutes on each side, or until golden brown and crispy.

Prepare the Cinnamon Sugar
In a small bowl, mix together the remaining sugar and cinnamon. Once the rabanadas are cooked, immediately coat them in the cinnamon sugar mixture.

Drizzle the rabanadas with caramel sauce and serve warm with scoops of vanilla ice cream on the side.
