    Prepare the Picanha

    Trim excess fat from the picanha, leaving about 1 cm of fat cap for flavor. Score the fat in a crosshatch pattern.

    Season the Meat

    Rub the kosher salt, black pepper, garlic powder, and olive oil evenly over the surface of the picanha. Optionally, add fresh rosemary for extra flavor.

    Preheat the Grill

    Preheat your grill to high heat, around 230-260°C (450-500°F).

    Grill the Picanha

    Place the picanha fat-side down on the grill. Cook for about 5-7 minutes until the fat is crispy. Flip it over and continue to grill for another 10-15 minutes for medium-rare, or until your desired doneness.

    Remove the picanha from the grill and let it rest for 10 minutes before slicing.
