Prepare the Crust
Preheat your oven to 325°F (160°C). In a medium bowl, mix the graham cracker crumbs and melted butter until combined. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes and set aside to cool.

Make the Cheesecake Filling
In a large mixing bowl, beat the cream cheese and sugar until smooth. Add the vanilla extract and mix well. Incorporate the eggs one at a time, mixing thoroughly after each addition. Finally, stir in the sour cream until well combined.

Bake the Cheesecake
Pour the cheesecake filling over the cooled crust and smooth the top. Bake in the preheated oven for 50-60 minutes or until the center is set but slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool inside for 1 hour.

Layer the Açaí Sauce
Once the cheesecake has cooled completely, drizzle the prepared açaí sauce over the top. You can swirl it in for a marbled effect or keep it layered.

Chill and Serve
Refrigerate the cheesecake for at least 4 hours, preferably overnight. Remove from the springform pan, slice, and serve chilled.
