For the Soup

Method

For the Soup

  1. 1

    Prepare the Soup Base

Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.

  2. 2

    Add Vegetables

Stir in the diced carrots and celery. Cook for about 5 minutes, stirring occasionally.

  3. 3

    Add Broth and Seasonings

Pour in the vegetable broth and diced tomatoes. Season with salt, black pepper, and Italian seasoning. Bring to a boil.

  4. 4

    Simmer the Soup

Reduce heat and let the soup simmer for 20-25 minutes, or until the vegetables are tender.

  5. 5

    Finish with Spinach

Stir in the chopped spinach and cook for an additional 5 minutes until wilted. Adjust seasoning if needed.

For the Surprise Bites

  1. 6

    Prepare the Filling

In a bowl, mix the softened cream cheese, chopped chives, and shredded cheese until well combined.

  2. 7

    Assemble the Bites

Roll out the puff pastry sheets on a floured surface and cut them into squares. Place a spoonful of filling in the center of each square.

  3. 8

    Seal and Brush

Fold the corners of the pastry over the filling and pinch to seal. Brush the tops with beaten egg for a golden finish.

  4. 9

    Bake

Preheat the oven to 400°F (200°C). Place the bites on a baking sheet and bake for 15-20 minutes or until golden brown.
