Accra - Salted Cod Fritters

Method

Samosas Preparation

Prepare the Filling

In a pan, heat vegetable oil and sauté chopped onions until translucent. Add ground beef, potatoes, frozen peas, salt, and black pepper. Cook until beef is browned and potatoes are tender. Remove from heat and let it cool.

Fill the Pastry

Place a spoonful of the filling onto a samosa sheet, fold, and seal the edges using water. Repeat until all filling is used.

Fry the Samosas

Heat vegetable oil in a deep pan. Fry the samosas until golden brown. Drain on paper towels.

Accra Fritters Preparation

Prepare the Cod

Soak the salted cod in water overnight to remove excess salt. Drain and shred the cod.

Mix the Batter

In a bowl, combine shredded cod, chopped onions, parsley, flour, water, salt, and pepper. Mix until combined.

Fry the Fritters

Heat vegetable oil in a pan. Drop spoonfuls of the batter into the oil and fry until golden brown. Drain on paper towels.

Garlic Naan Preparation

Prepare the Dough

In a bowl, mix flour, baking powder, and salt. Add yogurt and warm water, knead until smooth. Let it rest for 30 minutes.

Cook the Naan

Divide the dough into balls and roll into flat rounds. Cook on a hot skillet for 2-3 minutes on each side until puffed. Brush with melted butter and minced garlic.

Hummus Preparation

Blend the Ingredients

In a blender or food processor, combine chickpeas, tahini, lemon juice, minced garlic, olive oil, salt, and water. Blend until smooth.

Serve

Transfer the hummus to a bowl and drizzle with olive oil before serving.
