Cook the Potatoes

In a pot, boil the diced potatoes until tender. Drain and set aside.

Sauté the Aromatics

In a large pan, heat vegetable oil over medium heat. Add chopped onion and sauté until translucent. Stir in minced garlic and grated ginger, cooking for an additional minute.

Combine Ingredients

Add the cooked potatoes and chickpeas to the pan. Stir in the curry powder, coconut milk, salt, and pepper. Simmer for 10-15 minutes until the flavors meld together.

Assemble the Wrap

Prepare the Naan or Rice

Warm the Caribbean naan bread on a skillet for a few minutes on each side, or prepare a bed of steamed white rice.

Fill the Wrap

Spoon the curry filling onto the warm naan bread and fold it over. Alternatively, serve the curry on top of the steamed rice.
