Hot & spicy breaded chicken with house-made garlic sauce and mama's coleslaw served on a warm brioche bread and a side of our inhouse plantain chips.

Method
Prepare the Chicken
Marinate the Chicken
In a bowl, combine buttermilk and hot sauce. Add chicken breasts and marinate for at least 1 hour or overnight in the refrigerator.
Prepare the Coating
In a separate bowl, mix flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
Coat the Chicken
Remove chicken from buttermilk mixture, allowing excess to drip off. Dredge in the flour mixture, pressing to adhere.
Cook the Chicken
Fry the Chicken
Heat vegetable oil in a deep skillet over medium-high heat. Fry chicken for about 6-8 minutes per side until golden brown and cooked through. Drain on paper towels.
Make the Garlic Sauce
Combine Ingredients
In a small bowl, mix together mayonnaise, minced garlic, lemon juice, and salt to taste. Set aside.
Prepare the Coleslaw
Mix Coleslaw Ingredients
In a large bowl, combine shredded cabbage, shredded carrots, mayonnaise, apple cider vinegar, sugar, and salt. Toss until well combined and refrigerate until serving.
Prepare the Plantain Chips
Slice and Fry Plantains
Peel and slice the plantains thinly. Fry in hot vegetable oil until golden and crispy. Drain on paper towels and season with salt.
Assemble the Sandwich
Build the Sandwich
On each brioche bun, spread garlic sauce, add fried chicken, top with mama's coleslaw, and close the sandwich. Serve with plantain chips on the side.
