Method

Marinating Chicken

    Prepare the Marinade

    In a bowl, mix together jerk seasoning, olive oil, lime juice, minced garlic, and salt. Rub this mixture all over the leg quarters and let marinate for at least 1 hour, preferably overnight in the refrigerator.

    Cook the Chicken

    Preheat the oven to 375°F (190°C). Place marinated chicken in a baking dish and bake for 45-50 minutes or until fully cooked and juices run clear.

Cooking Rice and Beans

    Sauté Vegetables

    In a large pot, heat a little oil over medium heat and sauté onion, bell pepper, and garlic until softened.

    Cook the Rice

    Add rice, chicken broth, cumin, and salt to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until rice is cooked and liquid is absorbed.

    Add Beans

    Stir in the black beans and heat through for an additional 5 minutes.

Making Mac and Cheese

    Cook Pasta

    In a pot of boiling salted water, cook macaroni according to package instructions until al dente. Drain and set aside.

    Make Cheese Sauce

    In the same pot, melt butter over medium heat. Stir in flour and cook for 1 minute. Gradually whisk in milk and bring to a simmer. Stir in cheese until melted and smooth, then add cooked macaroni. Season with salt and pepper.

Frying Plantain

    Prepare Plantains

    Peel and slice the plantains diagonally into about 1-inch thick slices.

    Fry Plantains

    Heat vegetable oil in a frying pan over medium heat. Fry plantain slices until golden brown on both sides, about 2-3 minutes per side. Remove and drain on paper towels.

    Add Cinnamon

    Sprinkle fried plantains with cinnamon before serving.
