Chicken Preparation

Marinate the Chicken
In a bowl, mix the jerk seasoning, olive oil, minced garlic, lime juice, salt, and black pepper. Rub the mixture all over the chicken halves. Cover and marinate in the refrigerator for at least 2 hours, preferably overnight.

Grill the Chicken
Preheat the grill to medium-high heat. Grill the marinated chicken halves skin-side down for about 10-12 minutes. Flip and grill for another 10-12 minutes or until the internal temperature reaches 165°F (75°C). Brush with additional BBQ sauce during the last few minutes of grilling for extra flavor.

Cook the Rice
In a medium saucepan, melt the butter over medium heat. Add the rice and toast for 2-3 minutes. Pour in the chicken broth and add salt. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes. Once cooked, fluff the rice with a fork and stir in the drained corn.

Mix the Coleslaw
In a large bowl, combine the shredded cabbage, grated carrot, and diced apple. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, sugar, and salt. Pour the dressing over the cabbage mixture and toss to combine. Refrigerate for at least 30 minutes before serving.
