Curry Preparation

    Sauté the Aromatics

    In a large pot, heat the cooking oil over medium heat. Add chopped onions, garlic, and ginger, and sauté until the onions are translucent.

    Brown the Chicken

    Add the chicken drumsticks to the pot and brown them on all sides for about 5-7 minutes.

    Add Vegetables and Chickpeas

    Stir in the diced potatoes, bell pepper, and chickpeas. Cook for another 3-4 minutes.

    Incorporate Spices

    Add the curry powder, turmeric powder, salt, and black pepper. Mix well to coat the chicken and vegetables.

    Add Coconut Milk and Tamarind

    Pour in the coconut milk and tamarind paste. Stir to combine, then bring to a simmer.

    Simmer

    Cover the pot and let it simmer on low heat for about 30-40 minutes, or until the chicken is cooked through and tender.

Coconut Rice Preparation

    Rinse the Rice

    Rinse the basmati rice under cold water until the water runs clear.

    Cook the Rice

    In a saucepan, combine the rinsed rice, coconut milk, water, and salt. Bring to a boil, then lower the heat, cover, and let it simmer for 15 minutes or until the rice is cooked and fluffy.

Serving

    Plate the Dish

    Serve the Flavas curry over a bed of coconut rice or alongside warm Caribbean naan (roti). Enjoy your meal!
