    Clean the Mussels

    Rinse the mussels under cold running water to remove any sand or grit. Discard any mussels that are open and do not close when tapped.

    Melt the Butter

    In a large pot, melt the butter over medium heat. Make sure it doesn’t burn.

    Sauté the Garlic

    Add the minced garlic to the melted butter and sauté for about 1-2 minutes until fragrant, being careful not to let it brown.

    Add Broth and Mussels

    Pour in the vegetable broth and bring it to a simmer. Add the cleaned mussels to the pot, cover with a lid, and steam for about 5-7 minutes or until the mussels have opened.

    Garnish and Serve

    Once the mussels are cooked, sprinkle with fresh chopped parsley and serve with lemon wedges on the side.
