1. Prepare the Mash
In a large mash tun, combine 70 cups of corn, 10 cups of rye, and 10 cups of barley. Add 1500 ml of water and heat the mixture to 165°F (73°C). Stir the mash for 30 minutes to ensure even cooking.
2. Cool the Mash
Once the mash has been heated, allow it to cool to around 150°F (65°C) before proceeding to the fermentation stage.
3. Add Yeast
Once the mash has cooled, add 1 tablespoon of yeast to the mixture. Stir gently to incorporate the yeast evenly throughout the mash.
4. Fermentation
Cover the mash and let it ferment for about 3 to 5 days. Monitor the temperature and ensure it stays around 70°F (21°C). You will see bubbles forming as carbon dioxide is released.
5. Distillation
After fermentation, transfer the mash to a still. Heat the still to separate the alcohol from the solids. Collect the distillate until reaching the desired proof (usually around 120-130 proof).
6. Aging
Pour the distillate into charred oak barrels. Allow the bourbon to age for a minimum of 4 years. The longer it ages, the more complex the flavors will become.
7. Bottling
Once aged to perfection, transfer the bourbon to bottles. Seal and label them for storage or sale.
