Preparation of Seafood

Prepare the Fish
Rinse the fresh white fish under cold water and pat it dry with paper towels. Cut the fish into small, bite-sized cubes.

Prepare the Vegetables
While the fish is marinating, prepare the vegetables. Dice the tomatoes, finely chop the red onion, bell pepper, and celery, and set aside.

Combine Ingredients
Once the fish is marinated, remove it from the refrigerator. Drain any excess lemon juice, if desired, and gently mix in the diced tomatoes, red onion, bell pepper, celery, and chopped cilantro.
Seasoning and Serving

Season the Ceviche
Add salt, black pepper, and finely chopped jalapeño to the mixture. Stir gently to combine, adjusting the seasoning to taste.

Serve the ceviche chilled, in small bowls or on a platter with tortilla chips or lettuce leaves as a garnish.
