Preparation

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Prepare the Potatoes

    Wash the Russet potatoes thoroughly. Cut each potato in half lengthwise, then scoop out some of the insides to create a shallow boat shape, leaving about 1/4 inch of potato on the skin.

    Season the Potatoes

    In a bowl, mix the olive oil, salt, and ground black pepper. Brush the mixture onto the potato skins, ensuring they are well coated.

    Bake the Potato Skins

    Place the potato skins on a baking sheet, cut side up. Bake in the preheated oven for about 25-30 minutes, or until they are crispy and golden brown.

Filling

    Add the Fillings

    Once the potato skins are baked, remove them from the oven. Sprinkle the cooked ground beef evenly inside each skin, followed by the chopped bacon.

    Cheese Layer

    Top the ground beef and bacon with equal amounts of cheddar, mozzarella, and pepper jack cheese. Return the potato skins to the oven.

    Melt the Cheese

    Bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.

Garnish and Serve

    Remove the potato skins from the oven and sprinkle with chopped green onions. Serve with pico de gallo and ranch dressing on the side.
