Preparation of Oysters

Clean the Oysters
Rinse the Blue Point oysters under cold running water to remove any sand or debris. Use a brush to scrub the shells gently.

Shuck the Oysters
Using an oyster knife, carefully insert the knife into the hinge of each oyster. Twist and pry open the shell, being cautious of the sharp edges. Remove the top shell and set aside.

Plate the Oysters
Place the shucked oysters on a bed of crushed ice on a serving platter to keep them cold. Ensure they are stable and upright.
Serving Condiments

Prepare the Condiments
In small serving bowls, pour the red wine vinegar, cocktail sauce, and horseradish. Arrange them around the oysters on the platter.

If desired, you can garnish the serving platter with lemon wedges and fresh herbs for added color and flavor.
