Preparation of La Crema

Prepare the Cream Mixture
In a medium saucepan, combine the heavy cream, whole milk, and sugar. Split the vanilla bean lengthwise, scrape out the seeds, and add both the seeds and the pod to the saucepan.

Place the saucepan over medium heat and stir occasionally until the mixture is hot but not boiling. Remove from heat.

Stir in the salt and fresh lemon juice. Remove the vanilla pod and let the mixture cool to room temperature.
