Prepare the Crab
If using fresh crab, remove the crab meat from the shell and break it into bite-sized pieces. If using canned or pre-cooked crab, drain and set aside.

Shred the Cheese
Grate the pepper jack cheese if not pre-shredded, and set it aside.

Prepare Pico de Gallo
Make or buy pico de gallo. If making, combine diced tomatoes, onions, cilantro, lime juice, and salt in a bowl.
Cooking the Quesadilla

Heat the Pan
In a large skillet, heat 1 tablespoon of olive oil over medium heat.

Assemble the Quesadilla
Place one tortilla in the skillet. Evenly spread half of the crab meat and half of the shredded pepper jack cheese over the tortilla. Top with another tortilla.

Cook the Quesadilla
Cook for about 3-4 minutes or until the bottom tortilla is golden brown and the cheese begins to melt. Carefully flip the quesadilla and add the remaining olive oil if necessary. Cook for an additional 3-4 minutes on the other side until golden and crispy.

Repeat for Additional Quesadillas
Remove the cooked quesadilla from the skillet and keep warm. Repeat the process for the remaining tortillas, crab meat, and cheese.

Slice and Serve
Cut the quesadillas into wedges and serve hot with sour cream and pico de gallo on the side.
