Poach the Shrimp
Once the water is boiling, add the jumbo shrimp. Cook for 2-3 minutes or until the shrimp turn pink and opaque. Remove from heat and transfer the shrimp to an ice bath to stop the cooking process.
Make the Truffle-Dijon Aioli
In a bowl, combine mayonnaise, truffle oil, and Dijon mustard. Mix well until smooth. Adjust seasoning with salt if needed.
Prepare the Cocktail Sauce
In a separate bowl, mix the cocktail sauce with the remaining half of the lemon juice for added flavor.
Serve
Arrange the poached shrimp on a platter with small bowls of cocktail sauce and truffle-Dijon aioli. Garnish with lemon wedges.
