Prepare the Mash
In a large pot, bring 12 cups of water to a boil. Once boiling, remove from heat and add 2 cups of malted barley. Stir well and let it sit for about 60 minutes to allow the grains to release their sugars.
Strain the Wort
After 60 minutes, strain the mixture through a fine mesh strainer or cheesecloth into another pot, discarding the grains. This liquid is called wort.
Boil the Wort
Bring the wort to a boil again and add 1 cup of hops. Boil for 60 minutes, stirring occasionally. This step adds bitterness and flavor to your beer.
Cool the Wort
After the boil, cool down the wort quickly using a wort chiller or an ice bath until it reaches around 70°F (21°C).
Add Yeast
Once cooled, transfer the wort to a sanitized fermentation vessel. Sprinkle 1 packet of yeast over the top of the wort and seal the vessel with an airlock.
Fermentation
Allow the beer to ferment in a dark, cool place for about 1-2 weeks. Check the airlock regularly to ensure it is bubbling.
Bottle the Beer
After fermentation is complete, dissolve 3 tablespoons of priming sugar in a small amount of water and add it to the beer. Bottle the beer in sanitized bottles and cap them.
Conditioning
Let the bottles sit at room temperature for an additional 1-2 weeks to carbonate before refrigerating.
