Preparation Instructions

  1. 1

    Prepare the Potatoes

Boil the small potatoes in salted water until tender, about 15-20 minutes. Drain and let cool, then cut into halves or quarters.

  2. 2

    Cook the Green Beans

In the same pot, add the green beans and cook for about 3-4 minutes until bright green and tender-crisp. Drain and rinse under cold water to stop the cooking.

  3. 3

    Prepare the Eggs

Hard-boil the eggs by placing them in boiling water for about 9-12 minutes. Once done, cool them in cold water, peel, and quarter them.

  4. 4

    Assemble the Salad

In a large bowl, combine the potatoes, green beans, cherry tomatoes, olives, and tuna (drained and flaked).

  5. 5

    Make the Dressing

In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper.

  6. 6

    Combine and Serve

Drizzle the dressing over the salad and toss gently. Top with the quartered eggs and garnish with nasturtium leaves and flowers. Serve immediately.
