Prepare the Beets
Preheat the oven to 400°F (200°C). Wrap each beet in aluminum foil and place them on a baking sheet. Roast for 45-60 minutes, or until tender. Allow to cool, then peel and slice into wedges.
Make the Dressing
In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and black pepper to taste. Adjust seasoning as needed.
Assemble the Salad
In a large bowl, combine the mixed greens, roasted beet wedges, crumbled goat cheese, and toasted walnuts. Drizzle with the dressing and toss gently to combine.
