Prepare Sunflower Puree
Remove from heat and let cool slightly. Transfer to a blender, add olive oil, lemon juice, salt, and black pepper. Blend until smooth and creamy. Adjust seasoning to taste.

Cook Duck Breast
Place the duck breasts skin-side down in a cold skillet. Turn the heat to medium-high and cook for about 6-8 minutes, allowing the fat to render and the skin to become crispy. Flip the duck breasts and cook for an additional 4-5 minutes for medium-rare, or longer to reach desired doneness.

Rest and Serve
Remove the duck breasts from the skillet and let rest for 5 minutes before slicing. Serve slices of duck breast over a generous dollop of sunflower puree.
