Prepare the Scallops
Rinse the sea scallops under cold water and pat them dry with paper towels. Season both sides with salt and black pepper.

Sear the Scallops
Heat olive oil in a large skillet over medium-high heat. Once the oil is hot, add the scallops, making sure not to overcrowd the pan. Sear for about 2-3 minutes on each side until golden brown and cooked through. Add butter to the pan during the last minute of cooking and baste the scallops with the melted butter.

Assemble the Plate
On each plate, place 2-3 arancini pieces, then arrange the seared scallops alongside. Sprinkle with grated pecorino cheese and add a handful of mixed farm greens on the side.

Drizzle and Serve
Drizzle the balsamic reduction and lemon juice over the plate for added flavor and garnish. Serve immediately while hot.
