Saffron Spaghetti Recipe

Cook the Mussels
In a large pot, add the mussels with a splash of white wine. Cover and steam over medium heat until the mussels open. Discard any that don’t open.

Cook the Pasta
Bring a large pot of salted water to a boil. Add the handmade saffron spaghetti and cook for 3-4 minutes until al dente. Drain, reserving some pasta water.

Combine Everything
Add the cooked pasta to the skillet with salumi and peppers. Toss to combine, adding reserved pasta water as needed. Season with salt and pepper.

Prepare Lemon Breadcrumbs
In a small bowl, mix breadcrumbs with lemon zest and a drizzle of olive oil. Toast in a dry skillet until golden brown.

Serve
Plate the saffron spaghetti topped with sautéed salumi and peppers, poached mussels, and a sprinkle of lemon breadcrumbs.
