    Prepare the Brisket

    Preheat your oven to 300°F (150°C). Rub the brisket with olive oil, then season generously with salt, black pepper, smoked paprika, garlic powder, and onion powder. Place the brisket in a roasting pan and cover it tightly with foil. Roast for about 3 hours or until tender.

    Cook the Corn

    If using fresh corn, boil or grill the corn until tender and cut the kernels off the cob. If using canned corn, drain and rinse. Sauté in a skillet over medium heat with a pinch of salt for about 5-7 minutes until heated through.

    Prepare the Eggs

    In a non-stick skillet, add a bit of olive oil and heat over medium. Crack the eggs into the skillet and cook to your liking (sunny side up, scrambled, or over easy). Season with salt and pepper.

    Assemble the Dish

    Once the brisket is done, slice it against the grain. On a plate, layer slices of brisket, a serving of corn, and top with the cooked eggs. Drizzle with house-made barbecue sauce before serving.
