    Sear the Lamb

    In a large pot, heat the olive oil over medium-high heat. Season the lamb shoulder with salt and pepper, then sear it on all sides until browned. Remove the lamb and set it aside.

    Sauté Vegetables

    In the same pot, add onion, carrot, celery, and garlic. Sauté for about 5 minutes until the vegetables are softened.

    Deglaze the Pot

    Pour in the red wine and scrape the bottom of the pot to release any browned bits. Let it simmer for 2-3 minutes.

    Add Broth and Herbs

    Return the lamb to the pot and add the chicken broth, bay leaves, and rosemary. Bring to a simmer.

    Braise the Lamb

    Cover the pot and reduce the heat to low. Let the lamb braise for about 2 to 2.5 hours, or until it is tender and easily pulled apart with a fork.

    Rest and Serve

    Once the lamb is done, remove it from the pot and let it rest for a few minutes before shredding and serving with blue corn polenta.
