    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Prepare the Croissant Dough

    Roll out the croissant dough on a floured surface to fit your tart pan. Gently press the dough into the pan and trim the edges.

    Sauté the Onions

    In a skillet, melt 1 tablespoon of butter over medium heat. Add the sliced onions and sauté until they are soft and translucent, about 5-7 minutes. Season with salt and pepper.

    Layer the Ingredients

    In a bowl, combine the sliced apples, sautéed onions, reduced apple cider, Santa Fe Spirits Apple Brandy, and fresh thyme. Toss gently to coat the apples.

    Assemble the Tart

    Spread the apple and onion mixture evenly over the croissant dough in the tart pan. Crumble the goat cheese over the top.

    Bake the Tart

    Drizzle the remaining tablespoon of melted butter over the tart. Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the apples are tender.
