Method

Preparing the Tournedo de Filet Mignon

    Sear the Filet Mignon

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the filet mignon steaks with salt and black pepper on both sides. When the oil is hot, add the steaks and sear for 3-4 minutes on each side for medium-rare, or until your desired doneness is reached.

    Prepare the Crabmeat Topping

    In a small saucepan, melt 2 tablespoons of butter over medium heat. Add the crabmeat and lemon juice, mixing gently to combine. Cook for 2-3 minutes until heated through.

    Assemble the Tournedos

    Once the steaks are cooked to your liking, remove them from the skillet and let rest for 5 minutes. Top each filet with the crabmeat mixture before serving.

Making Truffled Mashed Potatoes

    Boil the Potatoes

    Peel and chop the potatoes into even chunks. Place them in a large pot and cover with cold water. Add 1 teaspoon of salt and bring to a boil. Cook for 15-20 minutes or until tender.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add 4 tablespoons of butter and heavy cream. Mash until smooth and creamy. Stir in 2 tablespoons of truffle oil, and season with salt and black pepper to taste.

Sautéing Shiitake Mushrooms

    Cook the Mushrooms

    In a separate skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add the shiitake mushrooms and cook for 5-7 minutes until they are tender and browned. Stir in 1 tablespoon of soy sauce and black pepper, cooking for an additional 1-2 minutes.
