Preparation of Roasted Potatoes and Vegetables

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Prepare Vegetables

    In a large bowl, combine the halved baby potatoes, carrot sticks, and zucchini slices. Drizzle with 2 tablespoons of olive oil, and season with 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 teaspoon of dried oregano. Toss to coat evenly.

    Roast the Vegetables

    Spread the vegetables in a single layer on a baking sheet. Roast in the preheated oven for about 25-30 minutes, or until the potatoes are tender and golden brown, stirring halfway through.

Cooking the Filet Mignon

    Season the Filet Mignon

    While the vegetables are roasting, season the filet mignon pieces with 1 teaspoon of salt and 1 teaspoon of black pepper on both sides.

    Heat the Pan

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until shimmering.

    Sear the Filet Mignon

    Add the seasoned filet mignon to the skillet and sear for 3-4 minutes on each side for medium-rare, or until desired doneness. Remove the steaks from the skillet and let them rest.

Making the Red Wine Sauce

    Sauté Shallots

    In the same skillet used for the filet mignon, reduce the heat to medium. Add 2 tablespoons of minced shallots and sauté for 1-2 minutes until translucent.

    Add Wine and Broth

    Pour in 1 cup of red wine and 1 cup of beef broth. Bring to a boil, scraping the bottom of the skillet to deglaze. Let it simmer for about 10 minutes until reduced by half.

    Finish the Sauce

    Remove from heat, stir in 2 tablespoons of butter and 1 teaspoon of fresh thyme until the butter is melted and the sauce is smooth.
