Method
Cooking the Pasta

Boil the Water
In a large pot, bring water to a rolling boil. Add 1 tablespoon of salt to the water.

Cook the Fettucine
Add the fettucine to the boiling water and cook according to package instructions until al dente, about 8-10 minutes.

Drain the Pasta
Once cooked, drain the pasta in a colander and reserve about 1 cup of pasta water.
Making the Marinara Sauce

Sauté Garlic
Add the minced garlic and sauté for about 1 minute until fragrant.

Add Tomatoes and Seasonings
Stir in the crushed tomatoes, oregano, basil, red pepper flakes, salt, and black pepper.

Simmer the Sauce
Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally. Add fresh chopped basil before serving.
Making the Vodka Sauce

Add Vodka
Pour in the vodka and let it simmer for about 2 minutes to cook off the alcohol.

Add Tomatoes and Cream
Stir in the crushed tomatoes and heavy cream, then season with salt and black pepper.

Simmer the Sauce
Reduce the heat and let the sauce simmer for about 10-15 minutes until it thickens. Add fresh parsley before serving.
Combining

Mix Pasta with Sauce
Add the drained pasta to the desired sauce (either marinara or vodka) and toss to combine. If the sauce is too thick, add a little reserved pasta water to reach desired consistency.

Serve immediately with extra fresh herbs or grated cheese if desired.
