Chicken Marinade

Marinate Chicken

    Prepare the Marinade

    In a large bowl, combine tandoori masala, plain yogurt, lemon juice, minced garlic, grated ginger, and salt. Mix well to form a smooth marinade.

    Marinate the Chicken

    Add the chicken thighs to the marinade, ensuring each piece is well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or ideally overnight for maximum flavor.

Cook Chicken

    Preheat Grill

    Preheat your grill or oven to medium-high heat (about 200°C / 400°F).

    Cook the Chicken

    Remove the chicken from the marinade and shake off excess. Grill the chicken for about 6-8 minutes on each side or until fully cooked and juices run clear. If using an oven, bake for 25-30 minutes, turning halfway through.

    Let it Rest

    Once cooked, let the chicken rest for 5 minutes before slicing into strips.

Assemble Wrap

    Prepare the Tortillas

    Warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side, just until pliable.

    Layer the Ingredients

    On each tortilla, layer shredded lettuce, diced tomatoes, cucumber slices, red onion, and the sliced tandoori chicken.

    Add Sauce and Garnish

    Drizzle with mint yogurt sauce and sprinkle chopped cilantro on top.

    Wrap it Up

    Fold the sides of the tortilla inwards and then roll from the bottom up to create a wrap. Secure with a toothpick if necessary.
