Marinate the Pork
In a large bowl, combine olive oil, minced garlic, paprika, salt, black pepper, and fresh thyme leaves. Mix well. Add the pork loin to the bowl, ensuring it is well coated with the marinade. Cover and refrigerate for at least 1 hour, preferably overnight for best flavor.
Cooking the Pork

Cook the Pork
Preheat your grill or skillet over medium-high heat. Remove the marinated pork loin from the refrigerator and let it sit at room temperature for about 15 minutes. Grill or sear the pork loin for about 6-8 minutes on each side, or until the internal temperature reaches 145°F (63°C). Once done, remove from heat and let it rest for 5 minutes before slicing.

Assemble the Sandwich
Slice the baguette or sandwich rolls in half lengthwise. Spread mayonnaise on each half. Layer with lettuce leaves, sliced tomatoes, and pickles. Finally, add the sliced pork loin on top. Close the sandwich and serve immediately.
