    Prepare the Ingredients

    Slice the beef into thin strips if not pre-sliced. Cut the green bell pepper and onion into thin slices. If using, slice the mushrooms.

    Cook the Vegetables

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and green peppers. Sauté for about 5 minutes until they soften. If using, add the mushrooms and cook for an additional 2-3 minutes. Season with salt and black pepper. Remove the vegetables from the skillet and set aside.

    Cook the Beef

    In the same skillet, add the remaining tablespoon of olive oil. Increase the heat to medium-high and add the thinly sliced beef. Cook for about 5-7 minutes, stirring frequently, until the beef is browned and cooked through. Season with additional salt and black pepper to taste.

    Combine and Melt Cheese

    Return the sautéed vegetables to the skillet with the beef. Mix well to combine. If using provolone cheese, lay the slices on top of the beef and vegetables, cover the skillet with a lid, and let it melt for about 2-3 minutes. If using Cheez Whiz, drizzle it over the top after removing from heat.

    Assemble the Sandwiches

    Slice the hoagie rolls or French bread lengthwise, being careful not to cut all the way through. Spoon the beef and vegetable mixture into each roll. Serve immediately while hot.
