Preparing the Salmon and Citrus Sauce

    Marinate the Salmon

    In a bowl, whisk together olive oil, lemon juice, orange juice, minced garlic, dill, salt, and black pepper. Place the salmon fillets in the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.

    Cook the Salmon

    Preheat your grill or skillet over medium heat. Remove the salmon from the marinade and cook for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork. Reserve the leftover marinade.

    Prepare the Citrus Sauce

    In a small saucepan, bring the reserved marinade to a boil. Reduce the heat and simmer for about 5 minutes until slightly thickened. Remove from heat and set aside.

Preparing Sweet Mashed Potatoes

    Cook the Sweet Potatoes

    In a large pot, add diced sweet potatoes and cover with water. Bring to a boil and cook for about 15-20 minutes until tender. Drain and return to the pot.

    Add butter, milk, salt, and cinnamon to the cooked sweet potatoes. Mash until smooth and creamy. Adjust seasoning if necessary.

Cooking the Vegetables

    In a large skillet, heat olive oil over medium heat. Add broccoli and carrots, season with salt and pepper, and sauté for about 5-7 minutes until tender but still crisp.

Serving

    On each plate, place a portion of sweet mashed potatoes, top with a salmon fillet, and drizzle the citrus sauce over the salmon. Serve with sautéed vegetables on the side.
