Sautéed Onions and Sausage

Broccoli Rabe

Method

Steak Preparation

  1. 1

    Marinate the Steak

In a bowl, mix olive oil, garlic powder, onion powder, paprika, salt, and black pepper. Rub this mixture all over the rib eye steaks. Let them marinate for at least 30 minutes at room temperature.

  2. 2

    Grill the Steak

Preheat the grill to high heat. Cook the rib eye steaks for about 4-5 minutes on each side for medium-rare, or until they reach your desired doneness. Remove from the grill and let them rest for 5-10 minutes.

Sautéed Onions and Sausage

  1. 3

    Cook the Sausage

In a skillet, heat 1 tablespoon of olive oil over medium heat. Remove the casing from the Italian sausages and crumble them into the skillet. Cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.

  2. 4

    Sauté the Onions

In the same skillet, add the sliced onion and cook until soft and caramelized, about 5-6 minutes. Add the cooked sausage back to the skillet and combine.

Broccoli Rabe Preparation

  1. 5

    Prepare the Broccoli Rabe

Bring a pot of salted water to a boil. Add the broccoli rabe and blanch for 2-3 minutes until bright green. Drain and immediately transfer to an ice bath to stop the cooking.

  2. 6

    Sauté the Broccoli Rabe

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and red pepper flakes. Sauté for about 30 seconds until fragrant. Add the blanched broccoli rabe, season with salt, and sauté for another 3-4 minutes until tender.
