Method

Preparation

  1. 1

    Trim the Meat

Begin by trimming excess fat from the picanha, leaving about 1/4 inch of fat for flavor.

  2. 2

    Prepare the Seasoning

In a small bowl, mix together kosher salt, black pepper, and garlic powder to create a seasoning blend.

Cooking

  1. 3

    Season the Meat

Rub the olive oil over the picanha, then generously apply the seasoning mixture over the entire surface of the meat. Let it rest for 30 minutes at room temperature.

  2. 4

    Preheat the Grill

Preheat your grill to high heat (about 450°F to 500°F). Ensure the grill grates are clean and lightly oiled.

  3. 5

    Grill the Picanha

Place the picanha on the grill, fat side down. Grill for about 5-7 minutes, then flip the meat and continue grilling for another 5-7 minutes for medium-rare doneness.

  4. 6

    Check Temperature

Use a meat thermometer to check the internal temperature. For medium-rare, it should read around 130°F to 135°F.

  5. 7

    Rest the Meat

Remove the picanha from the grill and let it rest for about 10 minutes before slicing.

Serving

  1. 8

    Slice and Serve

Slice the picanha against the grain into thin slices. Serve garnished with fresh parsley and lemon wedges if desired.
