Preparation of Calamari

    Clean the Calamari

    Rinse the fresh calamari under cold water. Remove the skin and the innards, and slice them into rings about 1/2 inch thick.

    Prepare the Breading

    In a bowl, mix the all-purpose flour, cornstarch, salt, black pepper, and paprika. In another bowl, whisk together the eggs and milk.

    Coat the Calamari

    Dip the calamari rings first into the egg mixture, then into the flour mixture, ensuring they are fully coated.

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Calamari

    Carefully add the coated calamari rings to the hot oil in batches. Fry for about 2-3 minutes or until they are golden brown and crispy. Remove and drain on paper towels.

Preparation of Marinara Sauce

    Sauté Garlic

    In a saucepan, heat olive oil over medium heat. Add minced garlic cloves and sauté for about 1 minute until fragrant.

    Add Tomatoes and Seasoning

    Add the canned crushed tomatoes, dried oregano, salt, and black pepper. Stir to combine.

    Simmer the Sauce

    Bring the sauce to a gentle simmer and cook for about 15 minutes, stirring occasionally. Add fresh basil leaves during the last few minutes of cooking.

Preparation of Tartar Sauce

    Mix Ingredients

    In a bowl, combine mayonnaise, chopped dill pickles, chopped capers, fresh lemon juice, salt, and black pepper. Stir until well mixed.

    Chill

    Cover the tartar sauce and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
