Prepare the Skirt Steak

Coat the Steak
Place the skirt steak in the marinade, ensuring it is well coated. Allow it to marinate for at least 30 minutes (or up to overnight in the refrigerator for more flavor).
Prepare the Vegetables

Toss the Vegetables
In a large bowl, combine the sliced bell peppers, zucchini, and red onion. Drizzle with olive oil and sprinkle with salt and black pepper. Toss until evenly coated.

Roast the Potatoes
