Method

Preparing the Filet Mignon

    Season the Steaks

    Pat the filet mignon steaks dry with paper towels and season both sides generously with salt and black pepper.

    Sear the Steaks

    In a large skillet, heat olive oil over medium-high heat. Once hot, add the seasoned steaks and sear for 4-5 minutes on each side for medium-rare, or until desired doneness is reached.

    Add Butter

    In the last 2 minutes of cooking, add butter to the skillet and baste the steaks with the melted butter for extra flavor. Remove the steaks from the skillet and let them rest for 5 minutes.

Making the Borderlaise Sauce

    Sauté Shallots

    In the same skillet used for the steaks, add the chopped shallots and sauté over medium heat until soft and translucent, about 2-3 minutes.

    Deglaze with Red Wine

    Pour in the red wine, scraping up any browned bits from the bottom of the skillet. Allow the wine to reduce by half, approximately 5-7 minutes.

    Add Beef Stock

    Add the beef stock to the skillet and allow to simmer for an additional 5 minutes until slightly thickened.

    Finish the Sauce

    Remove the skillet from the heat and whisk in the remaining butter until melted and the sauce is smooth. Stir in the chopped parsley, and season with salt and black pepper to taste.

Serving

    Plate the Dish

    Place each filet mignon on a plate and generously spoon the borderlaise sauce over the top. Serve immediately.
