Steak Preparation

Season the Filet Mignon
Generously season both sides of the filet mignon pieces with salt and black pepper.

Sear the Steaks
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the filet mignon pieces and sear for about 3-4 minutes on each side for medium-rare, or until desired doneness is achieved. Remove from the skillet and let them rest for at least 5 minutes.

In the same skillet used for the steaks, add the shallots and cook over medium heat until softened, about 2-3 minutes.

Add Beef Stock and Seasonings
Add the beef stock, thyme, and bay leaf to the skillet. Bring to a simmer and cook for another 10 minutes until the sauce is thickened.

Remove the bay leaf and stir in the butter until melted and the sauce is glossy. Adjust seasoning with salt and pepper to taste.
