    Prepare the Ingredients

    Start by slicing the chourico sausage into 1/2 inch thick rounds. Chop the garlic cloves, red bell pepper, and onion into small pieces. Set aside.

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the chopped garlic, onion, and red bell pepper. Sauté for about 5 minutes until the vegetables are soft and fragrant.

    Add the Sausage

    Add the sliced chourico sausage to the skillet. Sprinkle with paprika, salt, and black pepper. Cook for another 5-7 minutes, stirring occasionally, until the sausage is browned and heated through.

    Flambé the Mixture

    Carefully add the white wine to the skillet and allow it to simmer for about 2 minutes. Then, remove the skillet from the heat, add the brandy, and ignite it with a long lighter or match. Allow the flames to subside as the alcohol burns off.

    Once the flames have died down, add the chopped fresh parsley, stir to combine, and serve hot with crusty bread or over rice.
