Steak and Eggs

    Prepare the steak

    Season the shell steaks with salt and black pepper on both sides. Heat a skillet over medium-high heat and add a tablespoon of olive oil. Once hot, add the steaks and sear for 4-5 minutes on each side for medium-rare.

    Cook the eggs

    In a separate pan, add a tablespoon of butter over medium heat. Crack the eggs into the pan and cook until the whites are set but the yolks are still runny, about 3-4 minutes.

    Add prosciutto

    In the same pan as the steak, add the prosciutto slices during the last minute of cooking, allowing them to crisp slightly.

Spanish Fries

    Prepare fries

    Fry the Spanish fries in hot oil until golden brown and crispy, about 4-5 minutes. Drain on paper towels and season with salt.

Garlic Demi Sauce

    Make the sauce

    In a saucepan, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Pour in the beef stock and red wine, bring to a simmer, and add thyme. Cook until reduced by half, about 10 minutes. Season with salt and black pepper to taste.

Broccoli Rabe

    Cook broccoli rabe

    Blanch the broccoli rabe in boiling salted water for about 2-3 minutes, then drain and immediately immerse in ice water to stop cooking. Sauté in olive oil with minced garlic for about 3-4 minutes until tender.

Plating

    Serve the dish

    On a plate, place the cooked steak, top with sunny side eggs, and add crispy prosciutto. Arrange the Spanish fries and sautéed broccoli rabe on the side. Drizzle the garlic demi sauce over the steak and serve immediately.
